Herbalist’s Note

The hard, woody flesh of Quince is astringent from its high content of antioxidant catechins and tannins so it must be slowly simmered to coax out its exquisite fruity sweetness and tropical flowery aroma. Hibiscus and aromatic citrus peels are briefly steeped just prior to the cold crash to add a layer of quenching brightness and succulence. Finally, pink grapefruit and fresh yuzu juice are added after the initial filtration for a pungent, bittersweet citrus bite and a complex flowery aromatic finish.
